Costa Rican coffee farmers typically harvest once each year. It takes a month or two for local mills to process and package the beans. Then they are allowed to “rest” for another month or so before exporting. Exporters rate them by “cupping” to determine quality and selling price. Some farms and cooperatives have reputations that consistently command a price advantage. Transit by ship to U.S. importers takes another month, where they are cupped again. Then we begin tasting samples from microlots, and select our next coffees.

All of our coffee is “specialty” grade, a term reserved for the world’s highest-quality coffee. The single-farm microlots that we buy cost us 50% to 100% more than Costa Rica’s single-region “SHB Tarrazu” – itself a prized single-origin specialty coffee. Our unique coffees are highly rated, and some are processed in unusual ways. All have unique taste profiles. You’ll be sorry when your supply runs out.
BUILD YOUR “COFFEE CELLAR”
Fresh green coffee beans can be stored for two years or longer without losing flavor. If you save a half-pound of each of your favorites, you can create a “coffee cellar” to draw from in the future. Keep your roasting notes for future use! Store your coffee in a cool, dark, dry place – away from any odors that your coffee might absorb.
